Merlot Figs with Gorgonzola

Ingredients

6 figs
enough Latah Creek Merlot to cover figs
1-to-2 pounds gorgonzola cheese, cubed
12 thin slices of prosciutto, cut in half longwise

Directions


Place whole figs in a medium sauce pan. Pour enough Merlot into saucepan to just cover figs. Poach the whole figs in Latah Creek Merlot for 20 minutes, or until soft.


Drain and quarter the figs lengthwise.


To assemble, place a piece of gorgonzola on a fig quarter and wrap with a strip of prosciutto. Secure with decorative toothpick!

Ellena’s Notes

If I really want to impress my guests, I serve this appetizer. I love the flavors of both the figs and gorgonzola alone, but together they compliment each other so perfectly! A bonus is that you can make them a day in advance if needed.

This pairs wonderfully with our Merlot or Moscato.
