Ingredients
- 8 slices white bread (crusts removed)
- 1/2 to 1 lb. link sausage
- 3/4 lb. grated cheddar cheese
- 4 eggs (beaten)
- 2 1/2 cups milk
- 3/4 tsp. prepared mustard
- 1 can mushroom soup
- 1/2 can evaporated milk
- 1 – 4oz. can sliced mushrooms
Directions
In a 13 X 9 inch casserole dish, place 8 slices of white bread. Cook link sausage until brown. Cut into thirds and place on bread. Cover with grated cheddar cheese. In a separate bowl, beat 4 eggs until foamy; add milk, prepared mustard, and salt & pepper to taste. Pour this mixture over bread, sausage and cheese. Cover casserole dish and let stand in refrigerator overnight.
Before cooking, mix together mushroom soup, evaporated milk and mushrooms. Pour this mixture over casserole and bake in 300 degree oven for 45 minutes to 1 hour.

This is a timeless dish. I first enjoyed it when I was 18 and it was served at my bridal shower brunch. I have served it for Easter brunch every year since as well as a special treat for overnight guests.
